In a bowl, combine all crust ingredients and refrigerate for 30 minutes.In another bowl, whip cream with sugar and vanilla extract. Refrigerate.Using an electric whisk, beat cream cheese for 2–3 minutes.Add sweetened condensed milk, lime zest and juice, and stir well.Add whipped cream and stir gently.Put a spoonful of crust mixture in each glass.Top with a few raspberries and cheesecake batter.Chill for 4 hours.Before serving, top each glass with leftover raspberries.Note: do not freeze.

    Graham cracker crumbs
  • 1/2 cup
    (125 mL)
    butter, melted
  • 2 Tbsp.
    (30 mL)
    sugar

  • pinch of salt
  • cheese cake:

  • 1 cup
    (250 mL)
    35 % whipping cream
  • 2 Tbsp.
    (30 mL)
    sugar
  • 2 tsp.
    (10 mL)
    vanilla extract
  • 1x250 g
    cream cheese, room temperature
  • 1x300 mL
    sweetened condensed milk
  • 1/2 cup
    (125 mL)
    lime juice (about 8 fresh limes)
  • 2 Tbsp.
    (30 mL)
    lime zest
  • 2 cups
    (500 mL)
    fresh raspberries

Preparation
