In a bowl, combine all crust ingredients and refrigerate for 30 minutes.
In another bowl, whip cream with sugar and vanilla extract. Refrigerate.
Using an electric whisk, beat cream cheese for 2–3 minutes.
Add sweetened condensed milk, lime zest and juice, and stir well.
Add whipped cream and stir gently.
Put a spoonful of crust mixture in each glass.
Top with a few raspberries and cheesecake batter.
Chill for 4 hours.
Before serving, top each glass with leftover raspberries.
