Preheat oven to 425°F.Prepare zucchini fries.Cut 3/4 of the zucchini into 1/2" strips.Stir panko and parmesan cheese together in a bowl.Whisk 1/2 of the eggs in a separate bowl.Dip zucchini strips into egg mixture, shake to remove excess, roll in panko mixture and transfer to a baking sheet lined with parchment paper and bake 20 minutes, flipping halfway.Meanwhile, prepare the burger ingrédients.Finely slice green onion.Grate remaining zucchini.Mince garlic.Rinse and drain lentils.Slice the tomato.Heat olive oil in a pan over high heat.Add green onions and grated zucchini.Fry for 1-2 minutes.Add garlic and curry, stir, and transfer to a large bowl.Add lentils and breadcrumbs to the bowl.Use a potato masher or a fork to pulverise the ingredients.Add remaining egg and continue pulverising (Note: use a food processor if available).Season generously with salt and pepper.Form patties.Heat vegetable oil in the pan and sear the patties 1-2 minutes on each side over medium-high heat.Carefully flip them as they are very fragile!Prepare burgers by mounting patties in buns.Garnish with mayonnaise, tomato slices and lettuce.Serve with zucchini fries.Source: Missfresh.com

Preparation

Preheat oven to 425°F.

Prepare zucchini fries.

Whisk 1/2 of the eggs in a separate bowl.

Heat olive oil in a pan over high heat.

Add green onions and grated zucchini.

Fry for 1-2 minutes.

Add garlic and curry, stir, and transfer to a large bowl.

Add lentils and breadcrumbs to the bowl.

Use a potato masher or a fork to pulverise the ingredients.

Add remaining egg and continue pulverising (Note: use a food processor if available).

Season generously with salt and pepper.

Form patties.

Heat vegetable oil in the pan and sear the patties 1-2 minutes on each side over medium-high heat.

Carefully flip them as they are very fragile!

Prepare burgers by mounting patties in buns.

Garnish with mayonnaise, tomato slices and lettuce.

Serve with zucchini fries.
