Preheat oven to 425°F.
Prepare zucchini fries.
Cut 3/4 of the zucchini into 1/2" strips.
Stir panko and parmesan cheese together in a bowl.
Whisk 1/2 of the eggs in a separate bowl.
Dip zucchini strips into egg mixture, shake to remove excess, roll in panko mixture and transfer to a baking sheet lined with parchment paper and bake 20 minutes, flipping halfway.
Meanwhile, prepare the burger ingrédients.
Finely slice green onion.
Grate remaining zucchini.
Mince garlic.
Rinse and drain lentils.
Slice the tomato.
Heat olive oil in a pan over high heat.
Add green onions and grated zucchini.
Fry for 1-2 minutes.
Add garlic and curry, stir, and transfer to a large bowl.
Add lentils and breadcrumbs to the bowl.
Use a potato masher or a fork to pulverise the ingredients.
Add remaining egg and continue pulverising (Note: use a food processor if available).
Season generously with salt and pepper.
Form patties.
Heat vegetable oil in the pan and sear the patties 1-2 minutes on each side over medium-high heat.
Carefully flip them as they are very fragile!
Prepare burgers by mounting patties in buns.
Garnish with mayonnaise, tomato slices and lettuce.
Serve with zucchini fries.
