In a sauce pot, place the carrots, enough water to cover carrots, honey, brown sugar, thyme, and salt. Mix, cover pot, and bring water to a boil. Once boiling, bring heat down to a low heat and simmer until carrots are fork tender, up to an hour, checking frequently.
Once carrots are done, but still hot, drain and let cool slightly. Drizzle on additional 2 tsp of honey and lightly mix for added sweetness (this step is optional if you feel your carrots are not sweet enough, I like them sweet).
Meanwhile, in a small bowl, mix walnuts, herbs and lemon zest together. Set aside.
On a large serving platter, place the honey carrots. Sprinkle with the walnut gremolata. Enjoy!
