Preheat a BBQ or grill pan over medium heat.Season pork with salt and Pepper.Baste pork with 1/2 of the hoisin.Grill pork, turning a few times, for 18-20 minutes, or until a meat thermometer reads 160°F.Bring a large pot of salted water to a boil.Peel and mince Ginger.Thinly slice the green onion.Peel and cut carrots into matchsticks.Julienne (thin slices) the red pepper.Peanut sauce:In a bowl, whisk the soy sauce, lime juice, sambal oelek, peanut butter, salt and pepper. Reserve.Cook the noodles in the boiling water for 3 minutes. Drain and set aside.Heat the oil in a pan over medium-high heat.Add the ginger and white part of the green onion and cook for 1-2 minutes.Add carrots, red pepper, salt and pepper and cook, stirring, for 1-2 minutes.Add the noodles, peanut sauce and water to the pan and cook, stirring, for 1-2 minutes.Thinly slice pork and serve with the veggie noodles and remaining hoisin sauce on the side.Garnish with green part of green onion.Source: Missfresh.com
