Ham
Bring the ham up to room temperature an hour before cooking, prior to cooking, preheat the oven to 350°F.
Transfer ham to roasting pan with rack, add the water, cinnamon sticks, star anise, shallots, generously brush ham with glaze and cover with foil for 1 hour.
After the hour, remove the foil, and brush the glaze all over the ham again, add the apple slices and bok choy and place back in oven.
Baste every 20-30 min (using glaze and baking liquid in the baking pan) for another hour or so until instant read thermometer reads 140°F in the thickest part of the ham away from the bone.
Remove ham from the oven, cover again with foil, and let rest for 15 min.
Transfer the ham to a cutting board, and carve.
Remove the cinnamon sticks and star anise from the roasting pan and discard, transfer the vegetables and apple slices to a serving dish with the sliced ham.
Serve immediately.
Glaze
In a small pot, combine apple cider, cinnamon sticks, piece of ginger, star anise, 1 tsp of pink peppercorns, garlic and bring to a boil.
Reduce the heat and let simmer until liquid has reduced to 1/2 cup (125 ml) approx 20-30 min, strain, then add the cider vinegar, Chinese 5 spice, grated ginger, sesame oil, the remaining pink peppercorns, salt and black pepper.
Cook for another 10 min then remove from heat.
Taste and if need, season with more cider vinegar, pink peppercorns or salt and pepper if necessary.
Note: Pink peppercorns, star anise can be found at specialty spice or grocery stores
