Lightly toss the tomatoes, cucumbers, shallots, 1/4 tsp salt, 1 tbsp EVOO, mint and cilantro together in a large bowl and set aside. Brush 1 tbsp EVOO onto very hot grill and sear the melon balls about 1 minute each side. Transfer to bowl with mixed tomatoes. With an off set spatula or spoon, spread 1/2 cup of hummus each on two large dinner plates.Drizzle each serving with 1 1/2 tablespoons of Irresistibles Hot Chili Peppers over the hummus. With a slotted spoon, divide the watermelon salad between the two portions. Divide the lime juice, zest and pumpkin seeds and garnish between the two servings. Serve with some grilled pita or crusty bread. Enjoy.
