Arrange grapefruit supremes in four martini glasses. Set aside.Dissolve gelatin in 1/2 cup (125 mL) water and set aside.In a heavy saucepan over low heat, combine sugar and remaining water, stirring, until mixture is clear.Over medium heat, bring to a boil and boil for 1 minute. Add grapefruit juice and Campari and return to a boil.Add gelatin and stir until completely dissolved.Cool slightly.Pour into martini glasses and chill until firm. Serve with a dollop of whipped cream.

    unflavoured gelatin
  • 1/2 cups
    (125 mL)
    water
  • 3/4 cup
    (190 mL)
    sugar
  • 1 cup
    (250 mL)
    water
  • 2 cups
    (500 mL)
    fresh squeezed rio star grapefruit juice (about 3 medium grapefruit)
  • 155 mL
    Campari

  • whipped cream
