In a pan, bring water to a boil. Add spare ribs, onion, bouquet garni, bay leaf, salt and pepper.Simmer 30-45 minutes. Drain and set aside.Preheat the barbecue to medium ou oven "broil".In a glass bowl, combine all sauce ingredients.Place spare ribs on a sheet of oiled aluminium foil and brush with sauce.Cook 5 to 7 minutes on each side.Serve with tarragon rice.

  • 2 lb
    (900 g)
    fresh pork spare ribs
  • 1
    onion, quartered
  • 1
    bouquet garni
  • 1
    bay leaf

  • To taste, Salt and pepper
  • sauce :

  • 2 Tbsp.
    (30 mL)
    tomato paste
  • 1 tsp.
    (5 mL)
    cinnamon
  • 1 Tbsp.
    (15 mL)
    powdered mustard
  • 1 cup
    (250 mL)
    apple jelly
  • 1/4 cup
    (60 mL)
    soy or worcestershire sauce
  • 1 cup
    (250 mL)
    orange juice diluted in an equal amount of water
  • 3 Tbsp.
    (45 mL)
    sunflower oil

Preparation
