Preheat oven to 400°F.Line two baking trays with parchment paper.Have all ingredients prepped and ready to go before rolling out your pizza dough. Divide dough into 8 equal portions. Roll each piece of dough into a 6-inch circle. Place about 2 teaspoons of sauce on half of each circle, followed by a sprinkling of mushrooms and red peppers. Top each with shredded cheese. Fold dough in half over the filling. Use a fork to seal the edges of the pizzas. Place on prepared trays.Bake for 15 minutes, until pizzas are golden brown. Let cool at least 10 minutes before eating. Leftover pizzas can be frozen and reheated for after school snacks.
