In large saucepan, heat 2-3/4 cups (675 mL) of the almond beverage over medium heat until steaming.
Meanwhile, into small saucepan or microwaveable bowl, pour remaining ¼ cup (60 mL) almond beverage; sprinkle gelatin over top. Let stand until absorbed, about 5 minutes.
Heat over low heat (or in microwave on LOW in 10 second increments) until melted and liquid.
Stir sugar and extracts into large saucepan of almond beverage; stir in gelatin mixture. Ladle mixture into six lightly greased 6-oz (175 mL) ramekins. Cover loosely with plastic wrap and refrigerate until cold and set, at least 6 hours, or up to 24 hours.
Briefly dip bottom of each ramekin into bowl of warm water to loosen, wiping away moisture before unmoulding. One by one, invert serving plate over top of each ramekin. Turn upside down and remove ramekin to unmould. Spoon jam over top or around desserts; garnish with strawberries and almonds.
