Cook basmati rice as per instructions on the package. Set aside.While the rice cooks, cut tofu into 1 cm cubes. Place pieces in a large bowl. Add vegetable oil, coating tofu pieces well.Sprinkle cornstarch over all the pieces of tofu, coating them evenly. Season with salt, pepper and curry powder, to taste.Preheat air fryer to 200 °C (400 °F) for 8 to 10 minutes. Place tofu cubes in the basket, evenly spaced and not touching each other. Turn halfway through cooking time.In a large skillet, melt and froth butter. Add arugula and quickly braise it over high heat for about 1 minute. Season with salt, pepper and curry powder, to taste. Finish with a spoonful of fresh cream, stirring thoroughly.Place rice at the bottom of plates, topping with crispy tofu cubes and arugula, arranged delicately on top.
