In a bowl, mix dressing ingredients together. Set aside.In a skillet, brown chicken breasts in hot oil about 6-7 min. per side. Cut into strips and keep warm.In the same skillet, brown onion 1 min. Add tomatoes, capers and olives and sauté just until tomatoes are slightly soft.Divide garden salad among 4 plates. Place chicken strips on salad, cover with cooked tomatoes and drizzle with dressing.

    olive oil
  • 3 Tbsp.
    (45 mL)
    fresh lemon juice
  • 1 Tbsp.
    (15 mL)
    honey
  • 2 tsp.
    (10 mL)
    lemon zest
  • 1
    garlic clove, chopped

  • Salt and pepper to taste

    red onion sliced very thin

    capers drained

    yellow and red cherry tomatoes halved
