Place all the ingredients for the dressing, except for the olive oil, in a food processor. While the machine is running, add the oil in a thin stream through the feed tube. When the dressing is emulsified, taste, adjust the seasonings and set aside.Tear the lettuce into pieces, place in a large salad bowl and toss with the dressing, croutons and bacon bits. Add the grated parmesan and toss again.Serve with the chicken brochettes and parmesan petals.
