Heat a BBQ or grill pan over medium-high heat.In a bowl, mix the chicken with the egg, breadcrumbs, salt and pepper to taste.Form patties and reserve.Prepare the topping.Thinly slice the onion.Thinly slice the fig.In a pan over medium heat, add 1/2 of the olive oil and the onions.Cover cook for 10 minutes, stirring from time to time.To the pan, add the fig, wine, 1/2 of the balsamic vinegar and some salt.Stir, cover, reduce the heat to medium-low and simmer for 5 minutes.Meanwhile, cook the patties on the grill for 5-7 minutes each side, or until done.Assemble the salad by tossing the arugula with remaining olive oil, remaining balsamic vinegar, and topping mix.Assemble the burgers by topping the buns with a patty and a generous scoop of the fig-onion mixture.Serve with salad.Source: Missfresh.com
