Heat a BBQ or grill pan over medium-high heat.
In a bowl, mix the chicken with the egg, breadcrumbs, salt and pepper to taste.
Form patties and reserve.
Prepare the topping.
Thinly slice the onion.
Thinly slice the fig.
In a pan over medium heat, add 1/2 of the olive oil and the onions.
Cover cook for 10 minutes, stirring from time to time.
To the pan, add the fig, wine, 1/2 of the balsamic vinegar and some salt.
Stir, cover, reduce the heat to medium-low and simmer for 5 minutes.
Meanwhile, cook the patties on the grill for 5-7 minutes each side, or until done.
Assemble the salad by tossing the arugula with remaining olive oil, remaining balsamic vinegar, and topping mix.
Assemble the burgers by topping the buns with a patty and a generous scoop of the fig-onion mixture.
Serve with salad.
