Preheat oven to broil.Remove stems and place empty mushroom caps on a baking sheet. Set aside.In a bowl, mix diced apple, thyme, oil, garlic and pepper together and let stand for 15 min.Add diced cheese and mix.Stuff mushroom caps.Bake 5 min. or until cheese melts.
