Buffalo cauliflower bites :Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or a baking mat.In a large bowl, combine the chickpea flour, cornstarch, paprika, garlic powder, salt, and baking powder. Add the vinegar and soy beverage and mix until you get a thick batter.Add the cauliflower bites and coat each one. Transfer to the baking sheet, keeping them spread out. Spray a bit of cooking oil (optional) and bake for 20 minutes.Meanwhile, prepare the buffalo sauce: mix the tomato paste, molasses, maple syrup, hot sauce, oil, and smoked paprika in a small bowl until you get a smooth texture.Once the cauliflower has baked for 20 minutes, remove from the oven. Use a brush to coat each bite in buffalo sauce.Bake in the oven for another 15 to 20 minutes or until the bites have caramelized.Ranch salad :In a bowl, combine the romaine lettuce strips, red cabbage, and carrot. Add the Ranch dressing and toss.Assembly :Grill or heat the burger buns. .Top each bun with Ranch salad, Buffalo cauliflower bites, and Ranch dressing.
