Creamy peanut dressing :
Place all the ingredients for the sauce in a blender. Pulse until you get a smooth texture. Store in the fridge.
Salad :
In a pan on medium high, heat a spoonful of olive oil. Add the broccoli florets and a pinch of salt. Sauté for 3 minutes while stirring regularly. Remove from the heat and transfer to a large bowl.
In the same pan, heat another spoonful of oil. Add the carrots, corn, and a pinch of salt. Sauté for 2 minutes while stirring regularly. Remove from the heat and add to the bowl with the broccoli.
Pour half of the creamy dressing in the bowl and mix.
Top with the peanuts, red pepper flakes, and more dressing to taste.
Note:
You can use leftover dressing as a dip for vegetables! It can be kept for 3 to 4 days in the fridge.
