Preheat oven to 375°F/190oC.In a frying pan, heat oil and brown garlic and onion 1 minute. Add pancetta and carrot; cook 1 to 2 minutes. Transfer to a square Pyrex dish 23 cm x 23 cm (9 in. x 9 in.)In the same frying pan, melt butter. Lightly brown fennel quarters. Add vegetables to Pyrex dish.Add chicken broth level with fennel.Cover and braise 30 to 35 minutes.Season and serve right away.
