Mash blackberries with thyme and honey and set aside.
Brush one side of half of the bread slices with olive oil then top with two slices of prosciutto followed by two slices of cheese and 1-2 tablespoons of blackberry mixture. Top with remaining slices and brush tops with olive oil.
Melt butter in a large sauté pan over low to medium-low heat. When warm, place the sandwich in the pan and cook until golden brown, about 6-8 minutes. Flip and cook the other side until golden brown and cheese is melted, about 6-8 minutes.
Remove from pan and enjoy warm.
