Place Coke® Zero Sugar, cherries, cranberries and cornstarch in a large skillet. Bring to a boil stirring constantly until liquid is thickened and translucent. Reduce heat to medium and cook until cranberries burst while stirring occasionally; about 6 minutes. Scrape onto a large plate and set aside to cool.In a medium bowl, whisk together Coke® Zero Sugar, cocoa powder and oil. Whisk in flour and baking powder. Scrape batter onto a parchment lined plate; spreading into an even layer. Cook in the microwave for 2 minutes or until cake is done. Set aside to cool.Once cooled, remove cake from parchment and place on a cutting board. Cut cake into bite sized pieces.In a large bowl, whip cream and vanilla extract to stiff peaks.Arrange half of the cut cake pieces divided evenly among 4 x (8oz) glasses, top each with 2 tbsp (30 ml) cherry Coke® Zero Sugar layer and 1/4 cup whipped cream.Sprinkle remaining half of cake pieces among the glasses and top each equally with remaining cherry Coke® Zero Sugar layer.Garnish with dark chocolate shavings and mint if desired.
