Prepare the BBQ tofu:
Cut the tofu into small cubes and place in a bowl.
Combine the BBQ sauce and water. Pour over the tofu and make sure the cubes are thoroughly coated. In a skillet over medium heat, bring the tofu and sauce to a boil. Reduce heat to medium-low and cook for about 10 minutes until most of the sauce is absorbed by the tofu.
Prepare the salsa:
De-stem the strawberries. Dice the strawberries, red onion, jalapeno, mango. Place in a bowl with the remaining ingredients and toss. Set aside.
Heat a pan on medium high.
Once the pan is very hot, toast the tortillas for about 1 minute on each side until they start to brown. Set the hot tortillas aside on a plate covered with a clean cloth. Repeat until all the tortillas have been heated.
Assemble the tacos:
Tear the lettuce in two (or more pieces if the leaves are bigger) with your hands.
Layer two tortillas. Top with one or two pieces of lettuce, BBQ tofu, and Québec strawberry salsa. Repeat with all the tacos.
Makes 12 tacos
Serve immediately.
