Pulse crackers, tortilla chips and Italian seasoning in the bowl of a food processor to a breadcrumb texture. Transfer crumbs to a wide shallow bowl.
Place each flour and whisked eggs in shallow bowls. Cut cheestrings in half; coat 4 pieces in flour, shake off excess and coat in the eggs. Remove pieces and coat in crumb mixture. Repeat with remaining cut cheestrings.
Freeze coated cheese sticks for 30 minutes (this will help keep the cheese from oozing out before coating is crisp and golden).
Arrange frozen cheese sticks on a large parchment-lined baking sheet.
Bake in a preheated 450°F oven for 8-10 minutes until lightly golden and crisp. Sprinkle with chives.
Serve with marinara sauce.
