Mix the ingredients for the stuffing. Shape into a cylinder with your hands.
Refrigerate at least one hour.
Mix the eggs and canola oil. Set aside.
Cut open the chicken breasts into two sections lengthwise.
Place a cylinder of stuffing in each breast and close with a toothpick.
Dredge the chicken breasts and remove the excess flour.
Dip in the egg mixture, then in the breadcrumbs.
Repeat the previous step. Refrigerate.
Cook the chicken breasts on both sides in a skillet, until colored.
Bake at 350°F (180°C) for 10 to 12 minutes.
