Preheat oven to 250 F.Line a 18 x 13 sheet pan with parchment paper and brush sides with olive oil or cooking spray.In large bowl, whisk together the dry ingredients, flour, Lifesmart ground almonds, baking powder, baking soda, salt. In a different bowl, whisk together the wet ingredients, plant based milk, apple cider vinegar, extra virgin olive oil and sugar.Add the wet mixture to the dry and whisk until combined. Transfer to sheet pan and bake 15-16 minutes or until tester stick comes out clean.Cool cake for at least 2 hours before applying icing.Stir 1 cup of icing sugar and 1 1/2 tbsp plant based milk per bowl with food colouring until consistency is thick yet runny enough to be drizzled over cake.Working in layers, drizzle cake with icing.For more colours, simply create more icing by mixing a cup of icing sugar with 1 1/2 tbsp plant based milk and food colouring.
