Select the Right Bread

The first step in making a good sandwich is to choose the right bread. Forget white or brown sliced bread. Instead, use raisin-nut, multigrain, rye, egg or onion bread, ciabatta or flavoured wraps (such as basil or dried tomato).


Create Fabulous Fillings

The heart of a sandwich is what goes between the bread. Fresh herbs like basil or mint add a refreshing, sophisticated touch. The following ingredients are just suggestions; the possibilities are endless.

  • Sliced roast pork, mayonnaise, honey, sliced apple, spinach and Emmenthal
  • Cold cuts, Dijon mustard, mayonnaise, roasted red peppers (and/or dried tomatoes in oil), sliced black olives, fresh basil and provolone
  • Chopped cooked chicken, mayonnaise, pesto, tomato and cucumber slices
  • Cold cuts, salsa, sliced avocado, fresh coriander, and crumbled feta
  • Grilled eggplant slices with roasted red peppers, crumbled blue cheese and whole grain mustard
  • Thin-sliced smoked turkey, curly leaf lettuce and Havarti cheese, fresh thyme-flavoured mustard/mayonnaise sauce

  • Thin-sliced roasted pork, shredded carrots and parsley with mayonnaise and unsweetened apple sauce
  • Pastrami and white ham, sliced pickles, tomatoes, Mozzarina and aioli sauce
  • Basil pesto covered with pan-fried, seasoned tomato slices, fresh goat cheese medallions, caramelized onions, sliced black olives drizzled with olive oil and oven-roasted
  • Flaked tuna, cream cheese, zucchini sticks, broccoli florets and romaine lettuce
  • Grilled chicken strips, sliced radishes, and cashew nuts topped with spinach leaves and Californian vinaigrette
  • Layer slices of salami and cheddar, pepperoni and provolone, garnish with lettuce, and top with mild salsa

1Tofu and herbed ricotta ciabatta

In a bowl, mix ricotta, fresh oregano and chopped chives, lemon juice and Tabasco sauce. Slice the ciabatta bread lengthwise. Spread the ricotta mixture onto the bread and top with the tofu and pepper. Garnish with watercress or spinach. Serve the sandwiches with mesclun.

2Black Forest turkey breast tortillas with mango and curried mayo

In a bowl, mix the turkey strips, mango and red pepper. Blend curry mayo with a little maple syrup and add to the turkey mix. Place salad mixture in the middle of a tortilla. Fold the bottom part of the tortilla onto the salad, fold the sides and roll up tightly.

3Métis Ham with sun-dried tomatoes

Slice buns open and spread with Dijon mustard. Add Métis ham slices and top with Swiss cheese, sundried tomatoes and a few cooked asparagus tips. Place sandwiches on a piece of aluminum foil and grill on the barbecue, covered, for 2 to 3 minutes. Serve with a side of spinach and pine nut salad.

4Capicollo and smoked ham rolls

Steam the capicollo. Spread Dijonnaise sauce onto pre-heated tortillas. Add slices of red onion and sliced stuffed green olives and top with slices of capicollo and smoked ham. Roll the tortillas and cut diagonally.

5Smoked pork and guacamole on naan

Blend guacamole, chopped coriander, garlic and minced onions. Spread guacamole mix onto the naan and top with smoked pork slices. Sprinkle with grated Parmesan cheese and cut bread into individual servings.
