The Metro Homegrown Tour

Under Ontario law, you must be 19 years of age or over to purchase alcohol products. In submitting your order, you are representing yourself as being of legal drinking age in Ontario. In accordance with AGCO regulations, valid government photo ID will be requested upon pickup. If you are unable to verify your age by presenting valid identification at the time of pickup, all alcohol ordered will be removed from your order. Alcoholic products are available for pickup between 7am and 11pm.

Singer/songwriter/guitarist Terra Lightfoot loves touring and performing live. She has brought her passion, talent and energy to venues around the world, often alongside big names like Emmylou Harris, Gordon Lightfoot and Ron Sexsmith. Her sophomore album, Every Time My Mind Runs Wild, has been making waves since its 2015 release. Don’t take your eyes off this Ontario rocker: She’s on her way to superstardom!

With a variety of legendary live music venues big and small, plus the University of Windsor’s School of Music, Windsor’s local music scene is thriving, to say the least!

As the evening went on, local performer Brendan Schott Friel took to the Homegrown stage and delighted guests with a set of classic Canadian favourites.

The clincher? JUNO-nominated rocker Terra Lightfoot joined him on stage for a truly unforgettable Canadian musical experience that reflected the heart and soul of Windsor.


Canadian Agriculture in Windsor

Like many major Canadian cities, Windsor’s history is deeply rooted in its agriculture.

Nearly 50 years before the British established the town of Sandwich (it would be renamed East Windsor in 1929), Windsor was the site of a French agricultural settlement. The city’s current street system is a result of agricultural land division, where farms were long, narrow and positioned to face the river. To this day, many north-south streets bear the name of families that farmed that land at one time.

Farming continues to thrive in the area and Hylander Farms is a shining example. You’ve probably had the opportunity to enjoy the farm’s corn-finished Angus beef as well as its delicious veal. It’s a fact: Homegrown flavours always taste better.

In fact, many of the products you’ll find on the shelves at your Metro grocery store are sourced from local producers in Windsor.

To honour the city’s commitment to its local roots, Metro is working with Coalition Music’s Incubator Project to select local incubator artists such as Brendan Schott Friel, who will take the stage to perform a set of classic Canadian covers as the evening goes on. And—surprise!—a CCMA-nominated artist will join him on stage for a truly unforgettable Canadian musical experience.

You may recognize him from prestigious culinary events including the Visa Dining series and Taste of Toronto and now, he’s lending his talent to create Canadian-inspired menus for every stop on the Homegrown Tour. Don’t miss your chance to taste his one of a kind creations!

Watermelon and Charred Corn Summer Salad

Ingredients

  • 1/4
    Watermelon, sliced into ½ inch pieces (let watermelon reach room temp before serving)
  • 1
    Ear of corn

  • 75 g
    Feta, thinly sliced

  • 1/4 cup
    (60 mL)
    Fresh parsley

  • 1/4 cup
    (60 mL)
    Fresh basil
  •  
    Zest of 1/2 lemon
  • 4 Tbsp.
    (60 mL)
    Olive oil

Preparation

In a dry fry pan over medium/high heat sear corn until kernels are charred.

Remove kernels and set aside.

In a food processor blend parsley, basil, lemon zest, and olive oil into a pureed/pesto like mixture.

Add a pinch of salt and fresh pepper and set aside.

On a platter lay out the watermelon, topped with feta cheese.

Drizzle over basil/parsley mixture and lightly season with salt and pepper.

Garnish with your favourite micro-greens if desired.

Cornmeal Salmon with Quick Tartare

Ingredients

  • 2x4-6 onces
    (2x113-170 g)
    Skinless salmon filets
  • 1 cup
    (250 mL)
    Corn meal

  • 1 tsp.
    (5 mL)
    Smoked paprika

  • 2 Tbsp.
    (30 ml)
    Mayonnaise

  • 2 Tbsp.
    (30 mL)
    Greek yoghurt

  • 1 tsp.
    (5 mL)
    Capers
  • 1
    Small pickle (or cornichon)
  • 1 tsp.
    (5 mL)
    Fresh dill
  •  
    Zest of 1/2 lemon

Preparation

In a food processor, or with an immersion blender, whizz all ingredients except salmon, cornmeal and smoked paprika.

Don’t over process the mixture; you’re after a tartar sauce texture.

Check seasoning and set aside.

In a small bowl add cornmeal, smoked paprika, ¼ teaspoon of salt and a little cracked pepper.

Pat salmon filets with a paper towel to remove excess moisture, then add to cornmeal mixture, coat evenly on all sides.

In a small fry pan over medium heat add a good ¼ to ½ inch of vegetable oil (or preferred frying oil).

As oil begins to smoke add salmon filets.

Cook for 3 to 4 mins per side (for medium) or until cornmeal becomes slightly browned.

Remove and place on paper towel.

Serve with tartar sauce, a slice of lemon and a small side salad.
