Place frozen watermelon cubes, maple syrup, lime juice, and MiO in a large food processor or high-powered blender.Blend, stopping to scrape down sides occasionally until watermelon is mostly slushy. Add mint leaves and continue blending until completely slushy.Spoon mix into popsicle molds, tapping molds firmly several times onto surface to release any trapped air bubbles. Freeze pops 8 hrs or overnight.
