Prepare the sauce.
In a large quantity of salted water, cook the udon noodles for 8 minutes.
Drain, toss with soy sauce and divide into bowls.
While the noodles are cooking.
Slice the bok choy and sauté in a pan in vegetable oil for one minute over high heat.
Add the sambal oelek and divide into bowls next to the noodles.
Slice the radish.
Peel and cut the carrot into matchsticks.
Arrange the carrots, the radishes, the cabbage, the kimchi around the noodles and bok choy.
Slice the eggs and nori sheet.
Place on top of the bowls and serve.
