Heat oil in a large skillet or pot over medium heat. Add onion, carrot, celery, and garlic and cook until tender, 5 to 7 minutes.Add ground turkey and cook breaking up until no longer pink, 5 minutes. Season with salt and pepper.Stir in tomato paste and cook 1 minute.Deglaze with wine or broth and simmer until mostly reduced.Add crushed tomatoes, Italian seasoning, broth and bay leaf. Stir to combine.Bring to a boil, then reduce heat to medium-low and simmer for 15-20 minutes, until thickened.Meanwhile cook pasta unlit al dente and drain, reserving 1 cup of pasta water.Add the pasta straight into the pot of bolognese, tossing to coat, adding a little reserved pasta water if neededServe with Parmesan cheese and fresh basil.

Preparation

Meanwhile cook pasta unlit al dente and drain, reserving 1 cup of pasta water.

Add the pasta straight into the pot of bolognese, tossing to coat, adding a little reserved pasta water if needed

Serve with Parmesan cheese and fresh basil.
