Tapenade PuréeCrush garlic cloves.Use a pestle and mortar or fork to crush olives, anchovies, garlic and capers. Add pepper.Drizzle olive oil.Blend well to obtain a smooth paste.Add lemon juice.Preheat oven to 350°F/180°C.Spread 1/4 cup (60 mL) of tapenade purée on the short crust pastry.Cut goat cheese in rounds.Place the cheese on the tapenade.Garnish with slices of tomatoes.Drizzle a little olive oil on tomatoes.Bake in the oven about 30 minutes.

    commercial short crust pastry

    ripe tomatoes, sliced

  • sufficient quantity, extra-virgin olive oil

Preparation

Tapenade Purée

Crush garlic cloves.

Use a pestle and mortar or fork to crush olives, anchovies, garlic and capers. Add pepper.

Drizzle olive oil.

Blend well to obtain a smooth paste.

Add lemon juice.
