Wash potatoes without cutting them and pierce in various places using a fork.
Cook in microwave for 4 minutes (two minutes each side).
Once cooked to your taste, take out and slice off the top of each potato.
Spoon out potato and place filling in a platter.

Place puréed potatoes in the skins.
Drizzle chopped shallots and shredded mozzarella over them.
