In a large bowl whisk together the flour, sugar, baking powder, lemon zest, baking soda, and salt.Whisk together the eggs with the kombucha, melted butter and vanilla in another bowl. Pour the wet ingredients into the dry ingredients and mix until just combined into a lumpy batter, being careful not to over mix.Gently fold in the strawberries.Heat some butter in a skillet over medium/low heat. Spoon 1/4-1/3 cup of batter into the skillet. Cook for approx. 2 minutes or until there are distinct bubbles on the batter surface then flip and cook for another 1-2 minutes.Serve with a dollop of butter, more sliced strawberries, and maple syrup.
