Using floured fingers, stretch pizza dough very thinly.Place on baking sheet.Thinly spread romesco sauce over dough.Scatter caramelized onions over top followed by sausage then mozzarella cheese.Bake until base of crust is golden brown and cheese is bubbling, 8 to 10 min depending on thickness of dough.Meanwhile, toss arugula with lemon juice.Garnish hot pizza with arugula, pine nuts and pecorino.

    drained canned plum tomatoes
  • 1 tsp.

    chili pepper flakes
  • caramelized onion:

  • 2 tsp.
    (10 ml)
    olive oil
  • 1
    onion, thinly sliced
  • 1
    clove garlic, minced
  • 1
    pinch of granulated sugar

  • pizza:

  • 1 1/2 lb
    (750 g)
    prepared pizza dough or homemade
  • 3/4 cup
    (175 mL)
    very thinly sliced dry cured sausage, preferably Cacciatore, about 3 oz. (90 g)
  • 2 cups
    (500 mL)
    coarsely grated lightly packed Canadian mozzarella
  • 1 1/2 cup
    (375 mL)
    baby arugula leaves
  • 1 tsp.
    (5 mL)
    freshly squeezed lemon juice
  • 3 Tbsp.
    (45 mL)
    pine nuts, preferably toasted
  • 1/4 cup
    (60 mL)
    coarsely grated pecorino cheese
