Balsamic tomatoesPlace all the ingredients for the balsamic tomatoes on a baking sheet lined with parchment paper. Mix well. Set aside.SoccaIn a bowl, use a whisk to combine all the ingredients for the socca along with 1 tablespoon (15 mL) olive oil. Let rest for 20 minutes to 1 hour.With the oven rack in the middle position, preheat the oven to 450°F.Drizzle 1 ½ tablespoon of olive oil in a 10-inch cast iron pan and bake in the oven for 5 minutes.Place the dough in the hot pan and flatten it out with the back of a spoon. Place all the ingredients for the balsamic tomatoes on a baking sheet lined with parchment paper. Mix well. Set aside.

Socca
