Balsamic tomatoes
Place all the ingredients for the balsamic tomatoes on a baking sheet lined with parchment paper. Mix well. Set aside.
Socca
In a bowl, use a whisk to combine all the ingredients for the socca along with 1 tablespoon (15 mL) olive oil. Let rest for 20 minutes to 1 hour.
With the oven rack in the middle position, preheat the oven to 450°F.
Drizzle 1 ½ tablespoon of olive oil in a 10-inch cast iron pan and bake in the oven for 5 minutes.
Place the dough in the hot pan and flatten it out with the back of a spoon. Place it back in the oven at the same time as the tomatoes and bake for 13 minutes.
Creamy herb tahini sauce
In a narrow container, use a handheld blender to mix the ingredients of the sauce until you get a smooth texture.
Assembly
Top the socca with the zucchini, watercress, avocado, balsamic tomatoes, and serve with the sauce.
