In a bowl, mix breadcrumbs with parsley, parmesan and olive oil. Set aside.In a non-stick skillet, sear salmon 1 minute per side. Set aside.Preheat oven to 400°F/200°C.Coat fillets with mustard, salt and pepper, then divide the breadcrumb mixture among the 4 fillets. Place on a baking sheet and bake 8 minutes or until crust is browned.Meanwhile, toss mesclun and vinaigrette, divide among four plates and top with salmon. Garnish with cherry tomatoes and serve immediately.
