Pre-heat the oven to 400°F.
Begin by preparing the mayonnaise: In a small bowl, whisk the egg yolk with the Dijon mustard and lemon juice.
Drizzle the oil in while continuing to whisk.
Add the shallot, garlic, dill, and mix.
Refrigerate.
Add the chips to an airtight bag and crush them with a rolling pin.
In a bowl, combine the chips with the cheese.
Add some parchment paper to a baking sheet.
Place the salmon on the sheet.
Spread the homemade mayonnaise on the salmon.
Add the chip and cheese mixture on top and make sure to press firmly so it sticks to the salmon.
Cook in the oven for 20 minutes.
