In a small amount of water in a covered pan, cook leeks and sliced mushrooms 5 minutes; drain.Make béchamel sauce, cool slightly.Add leeks and mushrooms to the béchamel and a dash of wine (1oz) if you wish.Preheat oven to 375°F (190°C).Put rolled crêpes side by side in a dish.Top with grated cheese.Cook 15 minutes.

Preparation
