Preparation

Sweet Potato Mash

Add potatoes to a pot of salted water. Bring to a boil and cook until tender. Drain.

Mash potatoes with a masher or potato ricer until smooth.

Stir in butter, sour cream and chopped chives. Season to taste.

Mustard sauce

Combine sauce ingredients. Set aside.

Rib steaks

Heat oil in a skillet over high heat and cook steaks 2 - 4 minutes per side or to desired degree of doneness.

Serve immediately with sweet potato mash and mustard sauce.
