Prepare ingrédients.
Chop the garlic and add ½ to a medium-sized bowl with the juice of 1/2 the lemon, oregano, some salt, pepper and 1/2 of the olive oil.
Add pork to mixture, mix well and marinate.
Rinse rice 2 to 3 times in cold water, drain.
Bring salted water for rice and rice to a boil in a pot, cover, reduce to low and simmer for 5 minutes or until all water has been absorbed.
Remove from heat and set aside.
Soak the wooden skewers in water for 2-3 minutes (this will prevent them from burning during cooking).
Prepare the tzatziki.
Put the yogurt and the remaining garlic in a small bowl.
Finely chop mint and 1/3 of the cucumber, add to the bowl and mix well.
Thread pork cubes and cook in an oiled pan (or BBQ) over medium heat for 15 minutes turning them halfway through cooking.
Prepare the Greek salad.
Slice the rest of the cucumber.
Cut the tomato into large pièces.
Cut olives in half.
Finely slice the onion.
Cut the feta cheese into cubes.
Mix prepared ingredients in a bowl with the olives and rest of the olive oil, salt and pepper.
Serve the pork souvlaki with the Greek salad and the tzatziki sauce.
