Mix all ingredients (except the cauliflower and fresh herbs) together in a blender until you obtain a smooth, relatively elastic paste. Pour this marinade into a large bowl.
Clean the cauliflower and remove its leaves, keeping the cauliflower whole. Place the cauliflower in the bowl containing the marinade and coat it well.
Wrap the cauliflower in a sheet of aluminum foil large enough to seal in the cauliflower hermetically. Place your papillote on a small pizza pan and bake it in the oven at 375 °F (190 °C) for at least 45 minutes.
Once the cauliflower is tender enough for a knife to slide into it with minimal resistance, open the aluminum foil completely, baste the cauliflower with the marinade and broil it in the oven for 5–10 minutes or until nicely roasted, the marinade close to burnt.
Plate on a dish and serve this savoury side at the centre of the table.
Top with fresh herbs, to taste.
