Cook leeks in boiling salted water or chicken broth for 15 minutes or so, drain.Place a mignon leek on a slice of ham and roll up.Place the mignons leek roll-ups in a gratin dish.Prepare the white sauce, add Dijon mustard and season to taste.Cover the leeks with sauce and top with shredded cheese.Bake for 30 minutes.
