Preheat your oven to 375 °C.
Line a rimmed baking sheet with parchment paper and fill with an even layer of matzah.
In a heavy-bottomed saucepan, melt butter over medium heat. Whisk in brown sugar to combine and bring to a boil. Boil for a couple of minutes, stirring often. Whisk in vanilla and sea salt.
Pour the toffee mixture over the matzos and working quickly, use a spatula to spread in an even layer.
Place the baking sheet in the oven and reduce the heat to 350 °C. Bake for approximately 10 minutes, ensuring the caramel is not burning.
Remove the sheet from the oven and sprinkle the chocolate chips or wafers on top in an even layer. Let the chocolate melt from the heat of the caramel for about 5 minutes, then use a spatula to spread the chocolate over the whole tray.
Immediately sprinkle desired toppings over the chocolate and then let it sit. If you’re using any chocolate drizzles, ensure the first layer of chocolate is set first.
