Preheat oven to 350F.
Use wet SpongeTowels® to soften your brown sugar.
In a medium bowl, whisk together brown sugar, maple syrup, and melted butter for 30 seconds; add eggs and vinegar whisking further 15 seconds.
Pour mixture into a 3 cups capacity oven proof dish. Place dish on a baking sheet and bake in middle rack for 25 minutes.
Remove and let cool to set for 1 hour before serving.
Raise oven temperature to 375F.
Remove pie shells from aluminum pans, and press edges flat onto a cutting board. Using a 3 inch maple leaf cookie cutter, cut out about 11-12 pastry leaves from each pie crust to make 22-24 total.
Crinkle 2-3 large sheets of foil and place on a large baking sheet. Drape each leaf randomly on foil. Bake in middle rack for 12 minutes.
