    jumbo raw peeled shrimp

    firm mango, cut into 8 1 in. (2.5 cm) cubes
  • 0.500
    red pepper, cut into 8 cubes
  • 4
    small red onions, halved
  • 1
    lime, cut into 8 wedges

  • Salt and pepper to taste
  • Marinade

  • 2 Tbsp.
    (30 mL)
    extra virgin olive oil
  • 1/2 tsp.
    (2 mL)
    ground cumin
  • 1/2 tsp.
    (2 mL)
    ground Cayenne
  • 1/2 tsp.
    (2 mL)
    ground coriander

Preparation

Brochettes

Thread shrimp, mango, pepper, onions and lime onto 8 skewers that have been soaked in water. Season to taste. Set aside.

In a bowl, mix marinade ingredients together and brush over brochettes.

Refrigerate for 1 hour, turning brochettes over every 15 minutes.

Preheat barbecue to medium-high.

Grill brochettes 5 minutes per side or until shrimp are pink and vegetables are tender-crisp.
