Preheat the oven grill to highest setting.Rub some olive oil on the slices of bread and grill them in the oven on one side only. Remove when they are lightly browned.Cut the goat cheese in one centimetre slices. Place a slice of cheese on the plain side of each crouton.In four plates, place a few lettuce leaves.In a small bowl, pour the walnut vinegar. Add salt and pepper. Pour olive oil gradually while stirring with a whisk. Then pour the maple syrup, still whipping.Put the croutons and cheese in the oven. As soon as the cheese starts to take on an attractive light brown colour, remove. Pour a few spoonfuls of dressing on the lettuce leaves and top with three croutons. Garnish with walnuts and enjoy hot!
