Ham:Cook onion, garlic and ginger in olive oil a few minutes.Pour in liquids and add ham to casserole dish.Bring to a boil, then cover, reduce heat and simmer for 1 ½ hours or until meat is tender.Preheat oven to 350ºF (160ºC).Remove ham from casserole dish and place in a roasting pan.Strain cooking stock and pour 1/3 into the casserole dish.Reduce by 2/3 and mix with glaze ingredients.Dip ham into the glaze and place in oven for 30 minutes, basting often. Serve immediately.Green beans:Preheat oven to 400ºF (200ºC).In a mixing bowl, blend all ingredients except bacon.Roll 8 beans at a time in a strip of bacon and place in oven for 20 minutes.Sweet potato mash:Boil potatoes until tender.Transfer to a food processor along with butter and orange zest/juice.Pulse ingredients until smooth and season to taste.

    vegetable oil

    amber ale
  • 1 cup
    (250 ml)
    orange juice
  • 6 cups
    (1 1/2 L)
    sodium-free chicken stock
  • 5 1/2 lb
    (2 1/2 kg)
    bone-in ham
  • ham glaze:

  • 1 Tbsp.
    (15 mL)
    coriander seeds, roughly crushed
  • 1/3 cup
    (80 mL)
    honey
  • 8
    thyme branches, leaves plucked

  • 1" (3 cm) fresh ginger, grated
  • green beans:

  • 48
    fine green beans
  • 2 Tbsp.
    (30 mL)
    olive oil
  • 2 Tbsp.
    (30 mL)
    Meaux mustard

    bacon strips

  • salt and ground pepper

    large sweet potatoes, peeled and cut into large cubes

Preparation
