Soak skewers in water for 30 minutes.
Preheat oven to 450°F (220°C).
Line a baking sheet with parchment paper.
In a medium bowl, stir Coca-Cola with hoisin, finely grated peel of 1 lime and 2 Tbsp. (30 mL) lime juice, garlic, ginger and hot sauce.
Slice chicken length-wise into thin, ½ inch (1-cm) strips.
Add chicken to marinade. Stir. (This can be done the night before, cover and refrigerate until ready to cook)
Remove chicken from marinade; discard marinade.
Thread 1 or 2 strips onto each skewer (depending on length of strip) in a waxy fashion.
Place on baking sheet.
Sprinkle with salt.
Cook 8 minutes, turn, continue to cook 2 to 5 more minutes.
Swish chicken in sauce that has gathered on baking sheet.
Serve on a platter, garnished with thin lime wedges and coriander.
Tip:
If serving for dinner, use 3 or 4 chicken breasts with the same amount of marinade and leave chicken whole. Increase cooking time by 15 minutes, turning halfway through.
