Preheat BBQ or grill pan to medium-high.
Peel and cut sweet potatoes into wedges.
Thinly slice apples and onions.
Cut tomatoes and cucumbers into chunks.
Toss tomatoes and cucumbers in a bowl with balsamic vinegar, 1/2 the olive oil, and salt and pepper, set aside.
In a separate bowl, toss the sweet potatoes with the other 1/2 of the olive oil, salt and pepper.
Grill sausages until browned and cooked through, about 12 minutes, turning often.
Grill sweet potato wedges turning often for about 10-12 minutes, or until desired doneness.
Toss apples and onions in a bowl with mayonnaise, cider vinegar, mustard, and salt and pepper to taste.
Divide among buns.
Top the buns with sausages and serve with sweet potato wedges and tomato and cucumber salad on the side.
