Preheat the oven to 350°F (180°C).In a large mixing bowl, stir together the flour, ginger, cinnamon, nutmeg, cardamom, and baking soda.In a large bowl, using an electric hand mixer (or a stand mixer with the paddle attachment) beat the butter and sugar together until light and fluffy, about 3 minutes.Add the molasses and egg beating well to combine.Add the dry ingredients and stir until the mixture comes together to form a smooth dough.Divide the dough into two balls, wrap in plastic wrap and refrigerate for 1 hour until firm.Roll the dough out to a ¼ ” (6.3 mm) thickness and stamp out gingerbread men or other shapes using your favourite cutters.Place the shapes 2” (5 cm) apart on a parchment paper-lined baking sheet and bake for 16 to 18 minutes until lightly browned and firm.The icing should be thick enough to hold an edge when piped.Add a little more icing sugar if it is too runny.Decorate the gingerbread men with piped icing in a pastry bag with a small tip and your favourite decorations.
