Preheat the oven to 275°F (140°C).Drain the sauerkraut and rinse under a thin stream of cold water for 1 hour.Drain again and set aside.In an oven-proof pot, brown the onions in the olive oil over low heat. Add the sauerkraut. Moisten with the wine and beer. Add the spices and herbs.Add the bacon, chops and sausages.Cover and cook in the oven for 1 hour.Remove the meat and continue cooking for 2 hours.Put the meat and potatoes into the sauerkraut and cook for 20 minutes.Serve the dish nice and hot, and accompanied with Dijon mustard.
